My husband and I love Greek food. In fact we have a neighborhood Greek restaurant where the owner knows us by name and can recognize our voice over the phone when we call for take out. I like that this can be an easy one meal in a pot dish, but I love how she serves it with a antipasto platter of tomatoes, cucumbers, feta, and olives. I have some extra potatoes that need to be cooked soon, so I’m planning on making this dish sometime this weekend. Can’t wait to try it!
